Amber’s Gluten Free Chocolate chip Banana Muffins (2 dozen)

I am a Nanny in a allergy house hold… these took time to perfect, but they are perfected!!!! I make them with a 3yr & 6 yr. old… and they always work out!


1 1/2 c. Sugar
1/2 c. Margarine ( or coconut oil)
2 “eggs” (I use ‘Ener-G egg replacer’)
5 Very ripe Bananas( black, whizzled and defrosted is awesome!)
1/2 c. Almond Milk
1/2 c. Almond Meal
1 c. Gluten Free Flour blend (I love ‘Kinnikinnik’)
1/2 c. Coconut Flour
1 Tsp. Baking Soda
1 Tsp. Sea Salt
1 1/2 Tsp. Xanthan Gum
2/3 c. Chocolate Chips ( I like ‘Enjoy Life’)

Combine Wet Ingredients in a Medium bowl.
Combine Dry Ingredients in a Large Bowl.
Add wet to dry and mix gently until JUST mixed, there should be plenty of dry exposed.

I use an ice cream scoop to fill my muffin cups.

Bake at 350 for 20-25 minutes, until golden on top.
