Chocolate Beet Cake (Chocolate.. there’s someone I’d like you to meet…)

My adorable Sister in Law once brought a beautiful Chocolate Beet Cake over for Dessert… it was unforgettable!

-Chocolate Beet Cake-

1 large beet, cooked, peeled and pureed.

Add apple sauce to bring puree up to 2 cups

Add:  2 tbsp. water (use from the beet cooking water)

1 tsp. vanilla extract

1 tsp. apple cider vinegar

Combine dry ingredients:

1 cup whole wheat flour

1/2 oat flour

1/2 cup cocoa

1/2 cup ground flax

1 cup sugar

2 tsp. baking soda

1/2 tsp. salt

1/4 tsp. cinnamon

Combine wet and dry ingredients. Pour into a greased 9 x13 inch pan. Bake at 325 F for 35-55 minutes. Toothpick should come out clean! Allow to cool completely before cutting.

    Hi Amber I am going to try this recipe when I get home from work on Tues. I have heard lovely things about beet cake and am very excited! Please clarify – do you mean add enough apple sauce to the beet to make 2 cups? Thanks! Great site – keep up the good work!
