Divine Raw Truffles

These are simple, delicious and nutritious… but take a wee bit of planning ahead.

2 c. pitted dates
2 c. pecans, soaked 2 – 4 hours, drained.
1 tbsp. raw cocoa
1 tsp. vanilla

Throw everything in the food processor, and process until it forms a ball. Scoop into small balls and coat with ground nuts, coconut, chocolate nibs, hemp seeds… you get the idea;)

If you are feeling adventurous go ahead and try out a variation.

Variation 1:
Add 1/2 cup of pine nuts for a richer, smoother truffle. Just be sure to soak the pine nuts for an hour before processing.

Variation 2:
Add a few drops of your favorite extract to give the truffles your own personal flare.
