Toasted Cashew Chocolate Fudge Bars (Gluten and sugar free!)

I whipped these up this morning and enjoyed licking my fingers and spoons after wards.
Vegan cooking is the Bomb!

Combine in food processor:

1 c. prunes
1 c. dates (soaked and drained, save water)
1/2. c. Peanut butter

Process.
Add:

3 Tbsp . Chia or flax, ground
1/2 c. Cocoa Powder
1/2 Tsp. Cinnamon
1 c. Cashew/date Cream (which is what you have left after making cashew milk) You could use nut butter.
1 Tsp. Vanilla
Pinch of sea salt

Process.

Add 1 c. Toasted cashews

Process until combined.

Add 1/4 – 1/2 c. of date soaking water, SLOWLY , more or less depending on consistency. Enough so that the mix is combined without being sticky.

Spread into a pan and refrigerate for 2 hours until firm, or eat it as a lovely pudding right out of the food processor… ;)
If it’s very wet you can dehydrate it or stick it in the oven for half an hour or so on the lowest setting.

These are so delicious!

    Oh man. Now THIS sounds delectable. Greetings from the MN Vegan! Hope you get a chance to make it down here to Minneapolis sometime soon. Maybe we could hang, get some grub, schmooze. Ya know, fun stuff like that. Or maybe when I come up to Canada we could do the same!
